ARROZ A LA TURKA
Rice with Tomatoes and Peppers
At home it is refered as "Nice Rice", loved by everyone and the ideal side dish for many casseroles.
Serves 4

1 onion sliced
1 400g can chopped tomatoes
1 green pepper chopped
1 cup rice
2 cup water
1tbsp oil
salt

Brown onions in oil, add green peppers.

When onions and green peppers are brown, add the chopped tomatoes and their juice.

Cook for 10mn on medium high till very little liquid left.

Add water and salt and turn heat up.

When sauce is boiling, add rice.

Cover pot with lid and turn heat down to medium-low

Let it simmer for +- 40mn. till there is no more liquid.
PS: Also nice with mixed colour peppers. Chop a whole batch and keep small plastic container (approximately the amount of 1 pepper in the freezer.
