Rice with Tomatoes and Peppers

At home it is refered as "Nice Rice", loved by everyone and the ideal side dish for many casseroles.

1 onion sliced

1 400g can chopped tomatoes

1 green pepper chopped

1 cup rice

2 cup water

1tbsp oil     





  • Brown onions in oil, add green peppers.

  • When onions and green peppers are brown, add the chopped tomatoes and their juice.

  • Cook for 10mn on medium high till very little liquid left.

  • Add water and salt and turn heat up. 

  • When sauce is boiling, add rice.

  • Cover pot with lid and turn heat down to medium-low

  • Let it simmer for +- 40mn. till there is no more liquid.

PS: Also nice with mixed colour peppers. Chop a whole batch and keep small plastic container (approximately the amount of 1 pepper in the freezer.
