Rice with Tomatoes

Very simple and versatile recipe, often served at our grandmother's table and always accompanied the main course, together with a small tomato salad.  

In our household we call it "Aida Rice" as it is the name of one of my aunts, who kindly passed on this recipe to my mother.

1 glass of ordinary long rice.
1 and a half glass of water.

2 peeled and chopped tomatoes.
3 tablespoons of olive oil, a little salt.



  • Crush, the peeled fresh tomatoes in oil on low heat-

  • Add water and salt.

  • Boil and add the rice, well washed.

  • Cook over low heat, without stirring, 10 to 15 minutes.

  • Cover

  • If the rice is still crunchy, add some hot water.

  • Turn off the gas and leave to rest.
