Rice with Pine Nuts

The Arroz de Boda as the name implies was served at weddings and also at any important celebration or holiday.

25 gr pine nuts soaked in water overnight

25 gr pine nuts

1 cup long grain rice

2 cups water

Oil for frying the pine nuts


  • Soak the night before the 25gr of pine nuts in water.

  • Fry in a pot, the other 25 gr of pine nuts in a little oil till golden. Remove and reserve.

  • Add the water and salt to the pot together with the drained soaked nuts. Boil the water and when boiling add the rice.

  • Cover pot and reduce the heat. Simmer for about 1/2 hour till rice has absorbed.

  • Serve the rice garnished with the fried nuts.

PS: Could add shaved almonds or pistachios to add variety.
