FONGOS

Spinach Fritada with Mash Potatoes

When we were kids and my mom used to make the fongos, we would try to have as much as the “fongos” to avoid eating the spinach. The fongos are made of mash potatoes.  Fongos in ladino is mushrooms and these resemble mushrooms in the field.

2 bunch Chopped Spinach

4 large Potatoes

1 cup Grated Parmesan

1 cup Grated Cheddar

4 Eggs

3 Tbsp Oil or Spray and Bake

2 Tbsp Butter

Salt and Pepper to taste

  • Boil spinach till tender, drain and dry spinach thoroughly.

  • Boil peeled potatoes and mash them.

  • Mix spinach, ¼ of the mash potatoes and 3 well beaten eggs, plus 1 cup of mixed grated cheese.

  • Place mixture in an oiled Pyrex.

  • Mix ¾ of the mash potatoes with 1 beaten egg and 1 cup of mixed grated cheese. Drop this mixture to form 12 mounds on top of the spinach.

  • Brush some melted butter on top of the mounds.

  • Bake in oven 180C for about 30mn till mounds are coloured.
