Crustless Quiche

A Fritada is a baked crustless Quiche. Is not fried as a Mexican Frittata which is strange as "frita" in Ladino means "fried"

Fritada was served often in my home.  Always served cut into squares, one on top of each other and were placed on a pretty plate and served as part of a meze or as a starter with a greek salad. 

Serves 8

LEEK FRITADA

1 bunch leak cut in small rounds

2 big potatoes

2 cups  grated Parmesan

5 eggs

  • Preheat oven to 180 C

  • Peel and chop potatoes in to 3 cm cube.

  • Boil in a little water the leeks and potatoes.

  • When soft squeeze water out. 

  • Mash potatoes and leak with a fork.

  • Add grated parmesan cheese

  • Beat eggs and add to mixture

  • Spray Pyrex with spray’n cook

  • Transfer mixture onto Pyrex and bake for +-

      1 hour or until top is golden brown.

  • Cut into squares and place on serving plate

SPINACH FRITADA

1 kilo fresh spinach

4 eggs

2 or 3 boiled potatoes

2 thick slices of bread

2 cups grated parmesan cheese.

  • Preheat oven to 180 C

  • Wash spinach, cut roughly, put in pot of boiling water and let it cook for about 4 to 5 min. Rinse spinach in cool water.

  • Wet the sliced bread with running water and squeeze with your hands the water out.

  • Mash the potatoes.

  • Beat the eggs and mix all thoroughly.

  • Spray Pyrex with spray’n cook

  • Transfer mixture onto Pyrex and bake for +-

       1 hour or until top is golden brown.

  • Cut into squares and place on serving plate

SUN DRIED TOMATOES, FETA AND OLIVES FRITADA

1/2 cup  Sundried tomatoes

1/2 cup Kalamata olives chopped

100 gr Feta Cheese crumbled

1/2 cup Spring onion chopped

2 or 3 potatoes

1/2 cup grated Parmesan

6 eggs

salt, pepper, chopped herbs

 

  • Preheat oven to 180 C

  • Boil in a little water the onions and peeled potatoes.

  • When soft squeeze water. 

  • Mash potatoes and onions with a fork.

  • Add tomatoes, olives and Feta cheese.

  • Beat eggs and add to mixture

  • Add salt, pepper and mixed dried herbs. Mix

  • Sprinkle grated parmesan cheese on top

  • Transfer mixture onto Pyrex and bake for +-

       1 hour or until top is golden brown.

  • Cut into squares and place on serving plate

PS: You could substitute or add any other ingredients, like smoked salmon, smoked beef, mushrooms, asparagus etc or whatever your imagination allows.

Serving Suggestions:

As is a part of a Meze

Don't cut it up into small square and serve as a starter with a greek salad.
