KAPAMA
Baked Fish in Tomato Sauce
One of these recipes handed down from many generation, I know my mother got it from her mother Zephira.
Serves 8

11/2 kilo kingklip fish filleted or any white fish
1 onion, chopped
2 tablespoon oil
2 400g can peeled Italian tomatoes
2 cloves
1/4 cup dry white wine
1/2 teaspoon sugar
salt and black pepper
2 green peppers
1tbs cornflour
1 tablespoon chopped parsley

Preheat oven to 180C

Sauté onions and green peppers in oil until onions are soft and slightly brown. Add wine, tomatoes, cloves, sugar, salt and pepper.

Cover pan and simmer for 20 min.

Mix cornflour with some of the juice in a cup. When mix pour it into sauce

Add chopped parsley.

Grease baking dish with oil or butter. Put fish in dish and pour tomato sauce over.

Bake for 35 to 40 min or until if flakes easily with a fork.

Serve immediately or can be served next day when cold.

Rice, pasta or mash potatoes goes well with it.
PS: The basic ingredients and the simplicity of these dish gives its special Mediterranean touch.
