A great combination of tasty vegetables makes this a great vegetarian dish. 

1 cup dried lentils (green or brown)
Oil for frying
1 large onion, peeled and chopped
2 garlic cloves
2 carrots, chopped
2 stalks celery, chopped
2 stick leeks, chopped
1 can tomatoes, chopped
2-3 tablespoons chopped parsley
Salt and pepper

  • Boil lentils in water for +- 45 minutes (or according to package).  Drain. 

  • Chop all the other vegetable in a food processor and sauté in oil in large skillet. 

  • Add herbs, tomatoes, lentils, parsley, and salt and pepper to taste.  Stir.

  • Turn heat to medium and cook till mixture is thick, about 15 minutes.

Serving Suggestions:

As is as a side dish

Make it a main vegetarian dish with rice or mash potatoes

Add 500 gr veal shin or chicken white chopped and fry in a separate pan. Add the saute vegetables and follow the rest of the recipe.
