A great combination of tasty vegetables makes this a great vegetarian dish.
1 cup dried lentils (green or brown)
Oil for frying
1 large onion, peeled and chopped
2 garlic cloves
2 carrots, chopped
2 stalks celery, chopped
2 stick leeks, chopped
1 can tomatoes, chopped
2-3 tablespoons chopped parsley
Salt and pepper
Boil lentils in water for +- 45 minutes (or according to package). Drain.
Chop all the other vegetable in a food processor and sauté in oil in large skillet.
Add herbs, tomatoes, lentils, parsley, and salt and pepper to taste. Stir.
Turn heat to medium and cook till mixture is thick, about 15 minutes.
As is as a side dish
Make it a main vegetarian dish with rice or mash potatoes
Add 500 gr veal shin or chicken white chopped and fry in a separate pan. Add the saute vegetables and follow the rest of the recipe.
