Roast Nuts

Always present at the coffee table to enjoy with drinks.

When I was growing up this was the only way that I remember eating roasted nuts, hot out of the oven, crackling and salty.  My mother used to roast her own almonds, I remember many times she would forget them in the oven and we would hear screaming from the kitchen “las almendras estan kemadas” (the almonds are burnt) So watch them like a hawk.

My husband loves roasted giant red skin peanuts and has developed this amazing way of having them just perfect.

Perfect also for Roast Almonds.

2 cups (250grams) raw redskin regular size peanuts, or giant ones, or raw almonds (skin on).  

2 cups freshly boiled water.

4 level tablespoons table salt (or to taste)



  • Measure the salt into a bowl with a capacity of more than 4 cups.

  • Pour in the 2 cups freshly boiled water and stir until all the salt has dissolved. 

  • Add the 2 cups of nuts into the salt water and soak for 20 minutes, stirring every 5 minutes.

  • After 20 minutes soaking pour the nuts into a colander or strainer.

  • While they drain start heating your oven to 200 C. If your oven has a fan use it.

  • Line your baking tray with baking paper.

  • When your oven is ready pour the drained nuts onto the baking paper in the baking tray.


  • Put the baking tray into the oven , reduce the heat to 180 C.

  • Check after 12 minutes and if your oven has a hot spot moves the nuts around  to

  • avoid some being burned.

  • After 20 minutes remove baking tray, turn off oven and allow nuts to cool. They will continue cooking for 20 to 30 minutes.

  • If after cooling off you would like them crisper you can reheat oven and roast for another 5 to 10 minutes. 



PS: you could roast in the same way any other skinned nuts.
