Pretzel Shaped Biscuits
Also know by the Rhodeslies as Biskochos. A most delicious time consuming biscuit to make, my mother and latter myself would spend hours making them. They would last only a few days as children and grown-up would eat them with delight. Delicious with Turkish coffee. Also known as Koulourakia
Recipe: Granma Yvonne

1 cup oil
1 cup orange juice
1 cup sugar
3 eggs
700gr +/- self-rising flour
2 yolk mixed with water to glaze.
sesame seeds to decorate

Mix eggs and sugar, add oil and orange juice.

Add flour, a spoonful at the time and mix till dough is soft but not sticky. If still sticky add more flour.

Let dough rest for ½ hour.

Take a small ball of dough; roll it into a long string and form richicas (similar to pretzel)

Spray baking sheet with “spray and cook”

Place richicas on the baking sheet.

Brush with egg yolk which has been mix with few drops of water.

Sprinkle sesame seeds on top

Place in preheated oven 180C for 30minutes.
PS: The secret is to make them all the same thickness. One can change the shapes, example just round ones and only 2 circle etc.
PS2: They can also be decorated with 100 and 1000 or with chocolate chips for children parties.
