SUPA DE LENTEJA
In cold winter nights my father would ask my mother to make this soup. He would drop pieces of bread in the soup remembering "su descansada madre, ken ganeder este" cooking.
Lentil soup goes back to biblical time: When Jacob had cooked stew, Esau came in from the field and he was famished; and Esau said to Jacob, “Please let me have a swallow of that red stuff there, for I am famished”… But Jacob said, “First sell me your birth right.” Esau said, “Behold, I am about to die; so of what use then is the birth right to me?” And Jacob said, “First swear to me”; so he swore to him, and sold his birth right to Jacob. Then Jacob gave Esau bread and lentil stew; and he ate and drank, and rose and went on his way. Thus Esau despised his birth right.

1 onion chopped
1 carrot sliced
1 celery sliced
1 tomato chopped
2 chicken wings
200gr brown lentils
2 litre chicken broth
½ tsp cumin
Salt and pepper
Brown onion in oil, add the chopped vegetable, chicken wings, cumin, salt and pepper, stir and sauté for 5 min.
Than add the lentils and chicken stock. Bring it to the boil and turn plate to medium/low and let it simmer for about 1 hour.
Take the wings, keep the shredded meat and discard the bone.
Serve hot with bread
