Stuffed Vine Leaves

Turkish Yaprakes or Greek Dolmades. Always part of the Meze platter in in my parent’s home. 

Recipe: Grandma Yvonne


 

 

 

 

 

 

 

 

 

 

 

 

1 cup rice cooked for 5mn in boiling water
1 onion chopped
1 tomato 
parsley chopped
250 gr vine leaves (sold in supermarkets)
1/2 lemon juice
oil 
salt, pepper

 

  • Mix rice, chopped onion, chopped tomatoes, lemon juice and 1 tsp oil.

  • Place one leaf at a time on a plate and place 1/2 tablespoon of rice mixture near bottom of leaf.

  • Fold the  sides towards the centre and roll it up firmly.      

  • Continue procedure, placing yaprakes in the bottom of a saucepan. Add lemon juice, salt, 250 ml water and 1 Tbsp oil. Weigh down yaprakes with a plate.

  • Cover with lid and cook on low for about 1 hour till leaves change colour and are very soft.

  • Let cool and serve with slices of lemon. 

 

PS: Keeps for a long time in the fridge in a closed glass container.
